There is a nice route around Harewood House 35mins from York alternatively head up the A19, 35mins to Thirsk/Sutton bank. A couple of nice rides from Tadcaster:

Tad/Sutton/Crooked Billet pub/Cold hill/Saxton/Towton/Quarry/Sutton/Tad
or
Tad/Sutton/Hazlewood castle woods/Aberford/Bramham Park/Thorner/Red bus cafe/Scholes/Parlington/Aberford/Crokked Billet/Sutton/Tad

There's plenty of hard tail friendly riding local to York (I should know I ride one!).

Castle Howard / Hovingham area - good bridleways (unless it's rained lots)
Yearsley Forest
Sutton Bank
Anywhere up on t'moors - arm yourself with an OS map and make sure you can use it.
Wass Forest
Boltby Forest

Of course none of these places have "way-marked" routes in the Dalby/Trail Centre way of riding but they still offer great trails!

Enjoy
