There aren't that many roads in the Dales nr there - generally just one road up the valley and over to the next dale. Wherever you ride will be hilly....
An obvious route: The climb up from Malham is a decent hill, heading L at the top and then turning right, passing Pen-y-ghent on your L drops into upper Wharfedale. Passing through Arnclifffe you can continue the clockwise loop via Threshfield, Cracoe, Hetton and Airton. Loop could be done in reverse....

From Malham I'd recommend heading over to Kettlewell (about 15 miles) and then turning right in the village to climb Park Rash. Turn left once you hit the main road in Wensleydale once you've descended and ride to Hawes, where you turn left again to ride over Fleet Moss back to Kettlewell and then Malham. The whole route's about 75 miles and Park Rash and Fleet Moss are two of the really famous climbs in the Dales.
This website has some GPX files your friend might find useful (note I haven't used them myself), the Hawes Toughie covers most of the route I just described.
